I completely forgot to mention not to fill the muffin tins all the way to the top with the meat loaf. I did that the first time and ended up with overflowing tins dripping grease all over the oven, and then having to clean the oven.
Two ways to fix that problem...don't fill to the top, cook with leaner meat, put a cookie sheet under the muffin tins or on the rack below the muffin tins while cooking. Ok...that is three options. :)
